Alligator meat has a very mild
taste and readily adapts to recipes for pork, veal, chicken and
most seafood. Choice cuts of meat, primarily the tail and
jaw, can be used in any recipe. The body and leg meat, with
just a little preparation and special recipes, can be just as
tasty. The meat has a fine, light-grained texture that appeals
to most people and has its own unique flavor that is easily enhanced
with seasonings and sauces.

We provide the freshest
possible meat to our wholesale
distributors by keeping a limited inventory of unprocessed
alligator on hand at our plant . This has resulted in a
higher turnover of product not only for our distributors, but also
for the restaurants that have alligator on their menus.
Through this system we have managed to maintain a high sales
volume of over 150,000 pounds of alligator meat per year and
climbing.
All of our alligator meat
products are flash frozen for convenience and to extend self life.
Handle the meat as you would any other frozen product; mark the
product with the date of purchase and make sure it is tightly
wrapped to prevent freezer burn. We recommend that you keep
your alligator meat in the freezer for up to four months and thaw
it over night in the refrigerator.
